Spirit of Ilmington

Spirit of Ilmington is a craft distillery nestled in the North Cotswolds village of Ilmington, dedicated to reviving and elevating the areas ancient cider-making heritage. Their process begins by collecting surplus apples from local orchards and homeowners - a centuries-old tradition. This cider is then meticulously distilled in their copper alembic pot still to create their signature, mellow Apple Brandy. They uniquely incorporate a measure of this apple spirit into their other handcrafted spirits, including Dry Gin, Spiced Rum, and Vodka, lending a subtle, distinctive apple note to the finish of every bottle.
